Simple Chia Seed Pudding

Ah, winter break is over and it is back to the grind of early morning classes and little time for healthy meals. This is always a struggle for me, I want to eat healthy but on a college budget (and a college schedule) this is not always possible. That’s why I love this recipe! It super simple, cheap and can be done in no time at all. Chia seeds are a great source of calcium and Omega-3s, making them an excellent food to start your day with. I love to make this recipe on a Sunday night and have enough to get me through breakfast on Wednesday, it makes me feel great and saves time during those early mornings!

-   2 Cups of Almond Milk (I use the organic unsweetened version from Kroger)
  • 1/2 Cups of Chia Seeds 
  • 1/2 Teaspoon of vanilla extract 
  • 1/4 Cup of maple syrup (I use my own, I will post more about this later ;) )


Mix all ingredients together in a mason jar and refrigerate over night. In the morning you can add nuts, berries or anything you think might taste yummy. Enjoy!
